Hi, Joshua. First, tell me: when did you get into the restaurant business? What made you want to open a restaurant and to choose Tex-Mex concept for it?
In 2013, my business partner and I were working in the financial industry in London when at the spur of a moment, decided that we should quit our 9 to 5 jobs and start our own F&B business in China. At that moment, fast casual Tex-Mex concept like Chipotle were taking the food industry by storm in the US as well as Europe, through their focus on real food, real ingredients, fast service and all set in a modern but non-pretentious dining environment. We absolutely loved the idea and what it represented and started our journey, determined to bring this new food philosophy to China.
