In terms of quality, Riesling that comes from Rhine region of Germany is considered to be one of the top 3 white wines (of course, together with Chardonnay and Sauv Blanc). Traditionally, most Riesling wines are on the sweeter end of spectrum (with a recognizable notes of apricot, nectarine, peach, lime, lemon or pineapple), but are also known for their high level of acidity. However, if you are inclined towards leaner-tasting wines, you can always choose dry varieties of Riesling - nowadays, they are widely available, too. As to pairing, Riesling wines make the ideal accompaniment to spicy food. Strong Indian and Asian spices (mmmm, Sichuan food…) would be a perfect fit for this white wine. It also goes well with duck meat - Beijing kao ya, anyone?
